Blackberry Thyme Spritzer

•1/3 cup blackberries, 2 set aside for garnish
•4 sprigs of thyme. 3 to mix, 1 for garnish
•1/3 cup water
•1/3 cup sugar
•Ice cubes
•Bottle of Champagne or Prosecco
•2oz of Gin
•Splash of Lemon Juice

In a small saucepan, bring the blackberries, water and sugar to a boil. Turn to low heat and let simmer for 10 minutes. Strain blackberries and let syrup cool. Add 2 oz of blackberry syrup to the bottom of a glass. Add a splash of lemon juice. Add 3 sprigs of thyme, 2oz of gin, and a small handful of ice cubes. Shake well. Strain drink into a champagne flute, removing any big chunks of thyme. Finally, top with champagne or prosecco, and add in a sprig of thyme and two blackberries as a garnish.
